The professional layout

Everything you use most lives closest to your dominant hand. Ice, glass, tools, garnish — in that order. Speed is a layout problem before it is a technique problem.

Mise en place

Prep your citrus, syrups, garnishes and ice before service. A bartender who preps well looks calm; one who does not, looks busy.
